Outside of having to send mini to her room on behalf of her disrespectful behavior, I had a blast pulling off my Pinterest cooking projects.
I haven’t told the hubs this, but my goal nutritionally speaking is for us to eat 80:20–unprocessed:processed. Today I’m pretty sure we accomplished this.
Lunch: Eggplant Pizza’s w/tossed salad
This was my first time cooking eggplant. I’ve always been rather afraid of it though I LOVE eggplant parm. This was super easy to make though a bit time consuming and the family loved it. With 1 eggplant I made 9 mini pizzas that turned out really delicious.
Snack: Apple slices & 3 Ingredient Peanut Butter Cookies
One of my favorite snacks is apples w/ peanut butter. The flavors and textures are so complimentary its truly heavenly. As I was browsing Pinterest I came across these 3 ingredient “clean” cookies. Cookies are my weakness but I figured I couldn’t go wrong with a “clean” recipe. 1c of peanut butter, 1/3c of honey, 1 egg and 10 min later I had little bites of deliciousness.
Dinner: Zucchini boat Tacos
Say whaaaaat?! Zucchini boats?! Tacos w/ no tortillas or shells?! Yep, it is so. This was super easy and really delicious. I made this one up in my head and the actual manifestation was divine.
Post Dinner Snack: Frozen Yogurt
Yep, I made this too. It was soooooo good!
